Healthy Bitter Gourd Salad (Ampalaya Salad)

Ingredients:
1 full size Bitter Melon or Ampalaya
2 pcs Tomato
half slice red onion
ginger
2 tbsp vinegar  or 4 calamondin
1 tbsp salt
1 tsp. sugar

Slice Bitter Melon into thin slice, sprinkle 1 tbsp of salt and squeeze out the juice until it seems semi-transparent. Throw the bitter juice. Add the dissolve 1 tsp of sugar to 2 tbsp of vinegar or to calamondin juice. Add sliced Tomato and ginger then mix to cover all slices with vinegar. Top with thinly sliced ginger to add nice aroma and flavor.

Enjoy eating your healthy veggie salad.

  1. I love Ampalaya...I was raised as part of my diet. I noticed in the direction you wrote down "garlic", is it one of the ingredient or should it have been written as ginger.

    1. Hi, Minerva. I apologise it took years to respond. I never suppose that I will receive comments on my blog, but yes you are correct. It should be ginger. I already corrected the article. Have you made your own Amapalaya salad already?

  2. Hi - I would like to try this recipie, but I'm a little confused when you said to slice the Bitter Melon thinly then 'squeeze out the juice.' Then 'throw' the bitter juice. Are we pressing the 'thin' slices with a spoon or something, then 'throwing' the juice away? Thanks a bunch and thank you for the recipe!

    1. Hello there! I apologise for this really late reply! I never thought of I never suppose that I will receive comments on my blog, but thanks! We usually squeeze the juice with hands as we slice the bitter gourd a little thicker. But when you slice it thinly, I believe there's no need to squeeze out the juice. Squeezing out the juice is just to minimise the bitter taste and I believe thinner slices won't taste that much. Have you tried making bitter gourd salad?

  3. Guys, for me it is optional (throw the bitter juice or not) it's up to you if you can stomach the bitterness of the juice. For me, I liked it the bitter Bitter Melon salad with it's bitter juice..

    1. Hi, thanks for the suggestion. Yes, it's optional and when we slice the bitter melon thinly, we usually don't squeeze out the juice, however if we want to retain crunchiness we usually slice it a little thicker and squeeze out some bitter juice.

Another way to have an Ampalaya Salad is to bring water to boiling point and dip the sliced bitter melon into the boiling water for 5 to 10 seconds and with a strainer throw away the boiling water, this way the bitter melon bitterness is not that much and you can proceed the ingredients for the salad and enjoy!!
